Both use a Google Sheet. Why does the page speed differ?

SpreadFront renders every storefront page on the server as plain HTML, so the browser gets product names and prices in the first response. SpreadSimple stores load an application shell and fetch the products afterwards; see the PageSpeed links above and run them yourself.

Does SpreadFront update stock automatically?

No, and neither does SpreadSimple: both read your sheet and never write to it. Edit the Stock cell yourself; a zero hides the product from sale.

Which is cheaper?

SpreadFront Starter is €9 a month billed yearly (€108) for 1,000 products with a custom domain. SpreadSimple Starter is $12.90 a month for 500 rows; its yearly discount is advertised at 30% but the amount is not published.

What will I miss from SpreadSimple?

Non-store site templates (directories, catalogues), a wider gateway list including Razorpay and Mollie, and its add-on ecosystem. If you are building a directory rather than a shop, SpreadSimple is the better tool.
